Raspberry buns

Makes: 12 raspberry buns

  • 1 pinch salt
  • 200g self raising flour
  • 100g butter
  • 100g caster sugar
  • 100g desiccated coconut (optional)
  • 1 egg, beaten
  • 1 tablespoon milk
  • raspberry jam, to taste


  1. Preheat the oven to 220 C / Gas 7. Grease a baking tray.
  2. In a bowl, mix together the salt and flour, then cut in the butter and rub between your fingertips until the mixture resembles breadcrumbs. Add the sugar and coconut (if using) and mix well. Mix in the egg and milk until a dough forms then divide the mixture into 12.
  3. Shape each into a bun and place on the prepared tray. Make a well in the centre of the bun using your thumb and spoon a little jam into the hole.
  4. Bake in the preheated oven for 10 to 12 minutes, until they are brown and risen. Remove from the oven and allow to cool before serving and enjoying.
