Rhubarb Fool

Ingredients:
  • 1lb or 500 grams rhubarb
  • 2oz or 55 grams sugar
  • juice of one orange
  • 1/2 cup water
  • 4oz or 100 grams left over thick custard
  • 4oz or 100 grams whipped cream
Method:

Place the rhubarb, sugar, orange juice and water in pan and gently heat until the rhubarb has softened and the sugar has dissoslved stirring on a regular basis to ensure movement over the base of the pan to avoid burning

Set aside and cool

Mix the custard and the rhubarb mixture in a blender until combined

Fold in the cream and serve in tall glasses with reserved rhubarb as decoration

Alternatively layer the rhubarb, custard and then whipped cream in a tall glass for a light spring/summer option

Serve chilled
