Smoked Salmon with Fennel and Lime Salad

  • 1 tbsp Olive Oil
  • 1 Lime - zest and juice of
  • ½ fennel bulb - finely sliced
  • 110g/3½ oz Smoked Salmon - finely sliced
  • Handful fresh salad leaves
  • Season to taste with black pepper

Put the oil, lime juice and zest into a bowl and lightly whisk to combine

Add fennel to the bowl and marinate for 5 to 10 minutes

Mix lightly and serve placing the salad leaves then the fennel mixture and then adorn with the smoked salmon

Season with black pepper
