Rhubarb cumble

Preparation Time: 15 - 20 mins
Cooking Time: 20 - 30 mins
  • 1lb or 500 grams rhubarb
  • 2 oz or 55 grams sugar
  • Juice of one orange
  • 1/2 cup water
  • 1tsp ground or fresh ginger (chopped fine)
  • 4 oz or 100 grams butter
  • 4 oz or 100 grams demerara sugar
  • 6 oz or 150 grams sr flour

Preheat oven to 180°c - gas mark 4

Place the rhubarb, sugar, organge juice and water in pan and gently heat until the rhubarb has softened and the sugar dissolved, stirring on a regular basis to ensure movement over the base of the pan to avoid burning

Add ginger then set aside

Rub in the butter and sugar and flour until like breadcrumbs

Place the rhubarb into a heatproof dish and sprinkle the breadcrumb mixture over the top and bake in the preheated oven until golden brown

Allow to cool slightly before serving with either cream, custard, or ice cream or a combination
