Herbed cauliflower bake

Cooking Time: 35 - 40 mins
  • 450g cauliflower florets
  • 2 tsps unsalted butter
  • 4tblsps onions, chopped
  • 75g celery, chopped
  • 4 tblsps mushrooms, chopped
  • 120ml vegetable stock
  • 1tsp mixed herbs
  • 55g plain breadcrumbs

Preheat oven to gas mark 4/180ºc/350ºf.

Cook the cauliflower until it becomes tender.  Drain and keep warm.  Melt the butter in a pan over a medium heat.  Satué the onions, celery and mushrooms 4 - 5 minutes or until they begin to soften.  Stir in the remaining ingredients except the cauliflower and breadcrumbs.  Add salt and pepper to taste.  Simmer another 2 minutes.  Stir in cauliflower.  Transfer the mixture to a lightly oiled baking dish.  Sprinkle with the breadcrumbs and bake for 15 minutes or until the top has browned.
